  • 12 pieces Potstickers (homemade or frozen) Frozen potstickers can be used based on package instructions.
  • 4 cups Chicken or Vegetable Broth Use vegetable broth for a vegetarian version.
  • 1 tablespoon Fresh Ginger (minced)
  • 3 cloves Garlic (minced)
  • 1 can Coconut Milk
  • 2 tablespoons Soy Sauce Use gluten-free soy sauce for a gluten-free version.
  • 2 tablespoons Fresh Lime Juice
  • 1/4 cup Cilantro (chopped) For garnishing.
  • 1/4 cup Green Onions (sliced) For garnishing.

Instructions
 

Preparation

  • In a large pot, heat a splash of oil over medium heat.
  • Add minced ginger and garlic. Sauté for about 1 minute until fragrant.
  • Pour in the chicken or vegetable broth and bring to a simmer.
  • Stir in the coconut milk and soy sauce. Let it cook for another 5 minutes.
  • Add the potstickers to the broth and let them cook according to package instructions or until heated through if using homemade ones.
  • Once the potstickers are ready, add fresh lime juice, cilantro, and green onions.
  • Stir everything well and let simmer for an additional 2 minutes.
  • Taste and adjust seasoning if needed.

Serving

  • Serve the soup hot in bowls. Top with extra cilantro or green onions for a fresh touch.
  • Pair with lime wedges for a zesty squeeze.

Storage

  • If you have leftovers, let the soup cool completely. Transfer to an airtight container and store in the refrigerator for up to 3 days.
  • To reheat, warm on the stove or in the microwave. Note that potstickers might become softer when frozen.

Notes

For extra crunch, add sliced bell peppers or snap peas. For a spicier kick, include fresh chili pepper or a splash of sriracha. To thicken, mix in cornstarch dissolved in water before adding potstickers. You can substitute potstickers with dumplings or wontons.
