Main Ingredients

  • 2 cups cooked pasta Any shape of pasta can be used.
  • 1 can tomato sauce (15 oz)
  • 1 can kidney beans, drained (15 oz) Can substitute with black beans.
  • 1 cup corn
  • 1 cup shredded cheese Use cheddar or mozzarella for flavor.
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups cooked chicken or ground beef (optional)
  • to taste salt and pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked pasta, tomato sauce, kidney beans, corn, cheese, onion, bell pepper, and cooked chicken or beef if using.
  • Season with salt, pepper, garlic powder, and Italian seasoning.
  • Mix until well combined.
  • Transfer the mixture into a greased casserole dish.
  • Sprinkle additional cheese on top if desired.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is bubbly.
  • Let it cool for a few minutes before serving.

Notes

This casserole pairs well with a side salad or crusty bread. Garnish with fresh herbs for added flavor. Modify ingredients as desired.
