  • 1 cup coconut milk Full-fat is preferred for creaminess
  • 1 cup brown rice Can substitute with white rice
  • 1 tablespoon curry powder Adjust to taste
  • 1 tablespoon olive oil

Cooking Rice

  • Cook the brown rice according to package instructions.

Cooking Chicken

  • In a skillet, heat the olive oil over medium heat.
  • Season the chicken breasts with salt, pepper, and curry powder, then add them to the skillet. Cook until they are no longer pink in the center.
  • Pour in the coconut milk and simmer for 5-7 minutes until the sauce thickens slightly.

Serving

  • Serve the coconut chicken over the brown rice, garnished with cilantro and lime wedges.

Notes

For extra flavor, marinate the chicken in coconut milk and curry powder for 30 minutes prior to cooking. You may add vegetables like bell peppers or spinach while cooking the chicken.
