Ingredients
  

Main ingredients

  • 4 large bell peppers Choose a variety of colors for presentation.
  • 1 pound ground beef Can substitute with ground turkey, chicken, or a meat substitute.
  • 1 cup cooked rice Any type of rice can be used.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning Can be replaced with taco seasoning for a Mexican twist.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds.
  • In a skillet, sauté the onions and garlic until softened.
  • Add the ground beef and cook until browned.
  • Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  • Stuff the mixture into the bell peppers.

Baking

  • Place the stuffed peppers in a baking dish and top with shredded cheese.
  • Bake for 25-30 minutes, until the peppers are tender and the cheese is melted.
  • Serve warm.

Notes

Store leftover stuffed peppers in an airtight container in the refrigerator for up to three days, or freeze for up to three months. Let cool before storing.
