  • 2 pieces chicken breasts, cooked and shredded
  • 4 cups chicken broth
  • 2 cups egg noodles Cook according to package instructions.

Vegetables and Aromatics

  • 2 tablespoons ginger, minced
  • 3 cloves garlic, minced
  • 1 piece onion, chopped
  • 2 pieces carrots, sliced
  • 2 stalks celery, sliced

Seasoning and Garnish

  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions
 

Preparation

  • In a large pot, heat some oil over medium heat. Add the onion, ginger, and garlic, and sauté until the onion is translucent.
  • Add the carrots and celery, cooking for another 3-4 minutes.

Cooking

  • Pour in the chicken broth and bring to a boil.
  • Add the egg noodles and cook according to package instructions.
  • Stir in the shredded chicken and simmer until heated through.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with parsley or green onions.

Notes

For more flavor, consider adding a splash of soy sauce or a squeeze of lime juice. You can mix in other vegetables like peas or bell peppers as per preference.
