Ingredients

  • 2 boneless skinless chicken breasts
  • 12 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Bring a large pot of salted water to a boil and cook fettuccine according to package directions; drain and set aside.
  • Season chicken breasts with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear chicken for 6 to 7 minutes per side until fully cooked (165°F).
  • Remove chicken, let rest for five minutes, then slice into strips.
  • In the same skillet, sauté minced garlic for one minute.
  • Pour in heavy cream and bring to a gentle simmer.
  • Whisk in butter until melted and emulsified.
  • Gradually stir in the Parmesan cheese until the sauce is smooth and creamy.
  • Add cooked pasta and sliced chicken to the skillet and toss to coat thoroughly.
  • Serve warm, garnished with fresh parsley.

Notes

Ensure you use freshly grated Parmesan for the best melt quality as pre-shredded cheese often contains anti-caking agents that affect sauce texture. Adjust heat to low while adding cheese to prevent the sauce from breaking or becoming grainy.
