  • 1 clove garlic clove (minced)
  • 1/4 tsp salt
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil (extra virgin for best flavor)
  • 1 tsp dijon mustard
  • to taste pepper (freshly ground preferred)
  • 4 cups baby spinach
  • 1/2 cup sun-dried tomatoes (packed in oil preferred)
  • 1/2 lb orzo
  • 2 oz feta (crumbled)

Preparation

  • Cook the orzo according to the package instructions, salting the water for better flavor. Drain and set aside.
  • In a small bowl, mix the minced garlic, salt, balsamic vinegar, olive oil, and dijon mustard. Whisk until well combined and add pepper to taste.
  • In a large mixing bowl, combine the cooked orzo, baby spinach, and sun-dried tomatoes.
  • Pour the dressing over the orzo mixture and toss gently to combine all the ingredients.
  • Finally, sprinkle crumbled feta on top and give it another gentle toss.

Notes

This salad can be served immediately or chilled. It can be stored in an airtight container in the refrigerator for 2-3 days. Add spinach just before serving for best texture.
