Ingredients
  

For the Dough

  • 4 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 3/4 cup milk, warmed
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 cup dark chocolate chunks Use high quality for best flavor.

For Caramelized Crust

  • 1/4 cup sugar

Preparation

  • In a large bowl, mix flour, cocoa powder, sugar, salt, and yeast.
  • In another bowl, combine warm milk, melted butter, and eggs.
  • Pour the wet ingredients into the dry ingredients and knead until smooth.
  • Incorporate dark chocolate chunks into the dough.
  • Let the dough rise in a warm place until it doubles in size, about 1-2 hours.

Baking

  • Preheat the oven to 350°F (175°C).
  • Shape the dough into buns or braids and place them on a baking sheet.
  • Let them rise again for about 30 minutes.
  • Sprinkle sugar on top for a caramelized crust.
  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool slightly before serving.

Notes

Store any leftover Chocolate Brioche Buns in an airtight container at room temperature for up to 3 days. You can also freeze them for longer storage. Wrap the buns well in plastic wrap or foil and place them in a freezer bag. They will keep well in the freezer for up to a month. To enjoy, simply thaw and reheat them in the oven for a few minutes.
