Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the chickpeas, cherry tomatoes, avocado, feta cheese, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

For best results, consume fresh. If storing leftovers, add avocado only to the portion consumed immediately to prevent browning.
