  • 1/4 medium red onion, thinly sliced Can substitute with green onions or shallots.
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced

Preparation

  • In a large bowl, combine chickpeas, diced beets, feta cheese, and red onion.
  • In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Garnish with fresh parsley.
  • Serve immediately or refrigerate for 30 minutes to allow flavors to meld.

Notes

Best to serve fresh, but can be stored in an airtight container for 2-3 days. Consider storing dressing separately to maintain freshness.
