  • 2 cups shredded chicken
  • 2 smoky poblano peppers, diced
  • 1 cup sweet corn (fresh or frozen)
  • 1 can black beans, rinsed and drained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped cilantro for garnish

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add diced poblano peppers and sauté for about 5 minutes until soft.
  • Stir in shredded chicken, corn, and black beans.
  • Pour in the chicken broth and bring to a simmer.
  • Add cumin, chili powder, salt, and pepper.
  • Let the soup simmer for 15-20 minutes.
  • Stir in heavy cream and cook for an additional 5 minutes.

Serving

  • Serve hot and garnish with chopped cilantro.

Notes

This soup is delicious on its own but can be enhanced with warm tortillas or crusty bread. A sprinkle of cheese or avocado slices also adds a nice touch.
