Ingredients
  

  • 1/4 cup plain Greek yogurt (low fat or full fat; use dairy-free if preferred)
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic (grated)
  • 2 tbsp chopped flat-leaf parsley (substitute with cilantro)
  • 1 tbsp olive oil (extra-virgin preferred)
  • 1 1/2 tsp dried oregano (or 1 tbsp fresh)
  • 1/2 tsp smoked paprika (or regular paprika)
  • 1/2 tsp ground cumin
  • 1 lb boneless, skinless chicken breast (cut into 1-inch cubes)
  • 1 cup uncooked brown rice
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/4 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1 cup store-bought or homemade tzatziki

Instructions
 

  • Combine yogurt, lemon juice, garlic, parsley, olive oil, oregano, paprika, and cumin in a bowl
  • Marinate chicken in mixture for 30 minutes
  • Cook brown rice according to package instructions
  • Heat 1 tbsp oil in a skillet over medium-high heat
  • Sear chicken until golden (4-5 min per side)
  • Toss cooked rice with sesame oil and salt
  • Assemble bowls with rice, chicken, cucumber, tomatoes, olives, feta, and tzatziki drizzle

Notes

Let chicken sit at room temp while marinating
Add cooked red onion to tzatziki for extra layering
Use any leftover cooked rice for simplicity
Substitute arborio rice for a creamier texture
Thin tzatziki with a splash of water for easier drizzling
