  • 1 ripe avocado, sliced Ensure it is ripe for best flavor.
  • 4 whole wheat tortillas whole wheat tortillas Can use gluten-free tortillas for dietary restrictions.
  • 1 cup lettuce, shredded Any leafy green can be used.
  • 1/2 cup cherry tomatoes, halved Can substitute with regular tomatoes.
  • 1/4 cup red onion, thinly sliced Adjust quantity based on preference.
  • 1/4 cup Greek yogurt or ranch dressing For dairy-free use avocado oil or hummus.
  • to taste Salt and pepper Adjust seasoning per preference.

Preparation

  • In a bowl, mix shredded chicken with Greek yogurt or ranch dressing. Season with salt and pepper.
  • Lay a tortilla flat and spread a layer of the chicken mixture in the center.
  • Top with slices of avocado, lettuce, cherry tomatoes, and red onion.
  • Fold in the sides of the tortilla and roll it up tightly from the bottom.
  • Repeat with remaining tortillas.
  • Slice in half and serve immediately.

Notes

Serve fresh for best taste. Pair with a side of fresh fruit or a light salad. Leftovers can be stored in an airtight container; best eaten within one day. Add lime juice to keep avocado from browning.
