  • 2 cups cooked chicken, shredded
  • 2 ripe avocados mashed Use fresh for a creamy texture.
  • 1 cup shredded cheese (like cheddar or mozzarella)
  • 1 tablespoon lime juice
  • Salt and pepper to taste Adjust seasoning based on preference.
  • 4 slices bread (your choice) Hearty breads like sourdough work well.
  • Butter for spreading

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the shredded chicken and mashed avocados. Add lime juice, salt, and pepper. Stir well until everything is mixed.
  • Take two slices of bread and spread butter on one side of each.

Cooking

  • Place the buttered side of the bread down onto a skillet over medium heat.
  • Spread the chicken and avocado mixture on top of the bread in the skillet.
  • Sprinkle shredded cheese over the mixture.
  • Place the other slice of bread on top, buttered side facing up.
  • Cook until the bottom slice is golden brown, about 3-4 minutes. Carefully flip the sandwich and cook the other side until golden and the cheese is melted, another 3-4 minutes.
  • Remove from heat, slice, and enjoy!

Notes

You can serve warm with a side salad, chips, or soup. Leftovers can be stored in the refrigerator for up to 2 days. Reheat before serving.
