Muffin Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 large egg
  • 1 cup cherries, pitted and halved

Streusel Topping Ingredients

  • 1/4 cup oats
  • 2 tablespoons flour
  • 2 tablespoons butter, softened
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line a muffin tin with black paper liners.
  • In a mixing bowl, combine 1 cup flour, 1/2 cup sugar, 1/4 cup brown sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together milk, melted butter, and egg.
  • Combine the wet ingredients with the dry ingredients until just mixed.
  • Gently fold in the cherries.
  • In a separate bowl, mix oats, 2 tablespoons flour, softened butter, brown sugar, and cinnamon to make the streusel topping.

Baking

  • Fill each muffin liner with the batter and sprinkle with streusel topping.
  • Bake for 20-25 minutes or until a toothpick comes out clean.
  • Allow to cool before serving.

Notes

Serve warm or at room temperature. Great with whipped cream or vanilla ice cream. Store in an airtight container for up to three days, or freeze for up to three months.
