Ingredients
  

  • 1 lb lean ground beef
  • 1/2 medium onion, diced
  • 3 tbsp taco seasoning
  • 1/2 cup prepared salsa
  • 15 oz can black beans, drained and rinsed
  • 15 oz can sweet corn
  • 10 oz can diced tomatoes with green chiles
  • 8.5 oz bag ready rice (Spicy Mexican, cooked)
  • 1 1/2 cups shredded Colby Jack cheese

Instructions
 

  • Heat a skillet over medium-high heat; cook ground beef until browned. Add onion and taco seasoning, stirring until fragrant.
  • Stir in cooked rice, salsa, beans, corn, and tomatoes with chiles. Simmer 8-10 minutes, combining well.
  • Top with Colby Jack cheese, cover, and let melt 2-3 minutes. Garnish with cilantro if desired.

Notes

Ground turkey or chicken can substitute for beef. Use shallow corn kernels for even texture.
Ready rice should be precooked as per package instructions. Press rice tightly if frozen corn adds moisture.
