  • 1 cup orzo pasta
  • 1 lb ground beef Use lean ground beef to lessen excess fat.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup beef broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup shredded cheddar cheese Can swap for your favorite cheese or a mix of cheeses.
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: diced pickles, for garnish

Preparation

  • In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until softened.
  • Add the ground beef, cooking until browned. Drain excess fat.
  • Stir in the orzo, beef broth, ketchup, mustard, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for about 10-12 minutes, or until the orzo is cooked and the liquid is absorbed.
  • Stir in the shredded cheddar cheese until melted and creamy.

Serving

  • Serve warm, garnished with diced pickles if desired.

Notes

If you have leftovers, let the dish cool before storing. Place the orzo in an airtight container and keep it in the refrigerator for 3-4 days. To reheat, warm it on the stovetop or in the microwave, adding a splash of beef broth if it has thickened. For a twist, substitute ground beef with turkey or chicken, and add vegetables like bell peppers or spinach for extra flavor and nutrients.
