Ingredients
  

For the filling

  • 2 cups cooked chicken, shredded Rotisserie chicken can be used for convenience.
  • 1 cup shredded cheese (cheddar or Mexican blend) Use your favorite cheese blend.
  • 1 cup sour cream Can be substituted with Greek yogurt or cream cheese.
  • 1 cup enchilada sauce Spicy enchilada sauce can be used for heat.
  • 8 pieces flour tortillas Corn tortillas can be used for a different texture.
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish, optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the shredded chicken, half the cheese, sour cream, cumin, garlic powder, salt, and pepper.

Assembly

  • Spread a little enchilada sauce on the bottom of a baking dish.
  • Place some of the chicken mixture in each tortilla, roll them up, and place seam-side down in the baking dish.
  • Once all tortillas are placed, pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.

Cooking

  • Bake for 20-25 minutes or until heated through and cheese is bubbly.
  • Garnish with chopped cilantro if desired and serve hot.

Notes

Serve with a side of rice, beans, or a fresh salad. Top with additional sour cream, salsa, or guacamole for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
