  • 2 cups cauliflower rice You can use fresh or frozen.
  • 1 pound boneless, skinless chicken breast, cubed
  • 1 cup shredded cheese (cheddar or a blend) Use your favorite cheese.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup diced vegetables (optional) Like bell peppers or broccoli.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large oven-safe skillet, heat olive oil over medium heat.
  • Add the cubed chicken and season with garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through.
  • Stir in the cauliflower rice and any additional diced vegetables, mixing well.
  • In a bowl, combine heavy cream and chicken broth. Pour this mixture over the chicken and cauliflower rice.
  • Stir in half of the shredded cheese, mixing until everything is well combined.
  • Top the casserole with the remaining cheese.

Baking

  • Bake in the preheated oven for 25-30 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Serve warm with a side salad or steamed vegetables. For added freshness, garnish with herbs. To save time, use frozen cauliflower rice. Customize with different cheeses or protein options.
