  • 1 lb ground beef
  • 1 9 oz package refrigerated cheese tortellini
  • 1 10 oz can red enchilada sauce
  • ½ cup cream cheese
  • 1 cup shredded mozzarella cheese
  • ½ medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Preparation

  • In a large skillet over medium heat, sauté the diced onion until it becomes translucent, about 3–4 minutes.
  • Add the minced garlic and cook for another 30 seconds.
  • Add the ground beef to the skillet, seasoning it with salt, pepper, chili powder, and cumin. Cook the beef until it’s browned, then drain the excess fat.
  • Pour in the enchilada sauce and bring the mixture to a simmer.
  • Add the cream cheese in chunks and stir until it is fully melted and well combined.
  • Fold in the cheese tortellini. Cook on medium-low heat for 5–7 minutes until the tortellini is tender and heated through.
  • Sprinkle shredded mozzarella cheese on top. Cover the skillet and cook for 2–3 minutes, or broil until the cheese is bubbly and slightly golden.
  • Garnish with fresh cilantro if desired. Serve hot!

Notes

For storage, keep leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove. To save time, use pre-cooked beef or shredded rotisserie chicken instead of cooking ground beef. You can add jalapeños or hot sauce for extra heat. Experiment with different cheeses! This dish can be made vegetarian by using a meat substitute or omitting the beef.
