Main ingredients

  • 12 oz cheese tortellini Use fresh or frozen tortellini.
  • 1 lb steak (such as ribeye or flank steak), thinly sliced Choose a good quality steak for the best flavor.
  • 1 cup heavy cream
  • 1 cup shredded provolone cheese Can be swapped for mozzarella or cheddar.
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced onions
  • 2 tbsp olive oil

Instructions
 

Cooking the tortellini

  • Cook the tortellini according to package instructions and drain.

Cooking the steak and vegetables

  • In a large skillet, heat olive oil over medium-high heat.
  • Add sliced steak, cooking until browned and cooked through, about 3-5 minutes.
  • Add bell peppers and onions, cooking until tender, about 3-4 minutes.

Making the sauce

  • Reduce heat and stir in the heavy cream, letting it simmer for a couple of minutes.
  • Add in the provolone cheese, stirring until melted and smooth.

Combining ingredients

  • Toss the cooked tortellini into the skillet, coating completely with the sauce.
  • Season with salt and pepper to taste.

Notes

For added flavor, you may include Worcestershire sauce or garlic while cooking the steak and vegetables. If you'd like a little heat, consider adding sliced jalapeños or crushed red pepper flakes. Store leftovers in an airtight container and keep in the refrigerator for up to 3 days.
