  • 12 oz tortellini Cook according to package instructions.
  • 1 lb sirloin steak, thinly sliced Slice thinly for even cooking.
  • 1 bell pepper, sliced Any color bell pepper can be used.
  • 1 onion, sliced
  • 2 cups provolone cheese, shredded Can use a blend of cheeses if desired.
  • 2 tbsp olive oil For sautéing.
  • 1 cup beef broth
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add the sliced steak and cook until browned.
  • Add the bell pepper and onion to the skillet, and sauté until soft.

Cooking

  • Pour in the beef broth and bring to a simmer.
  • Stir in the provolone cheese until melted and combined, creating a rich sauce.
  • Toss the cooked tortellini in the skillet with the steak and cheese sauce.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with additional cheese if desired.

Notes

To store any leftovers, place them in an airtight container. You can keep them in the refrigerator for up to 3 days. Reheat in a skillet over low heat, adding a splash of beef broth if needed to loosen the sauce.
