Ingredients
  

  • 4 tablespoons butter, divided
  • 1/2 pound lean ground beef
  • 3/4 cup chopped onion
  • 3/4 cup shredded carrots
  • 3/4 cup chopped celery
  • 4 cups cubed potatoes
  • 3 cups chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/4 cup all-purpose flour
  • 1 1/2 cups milk
  • 1 cup melted cheddar cheese

Instructions
 

  • Melt 2 tablespoons butter in a large pot over medium heat.
  • Add ground beef and cook until browned, 5-7 minutes.
  • Stir in chopped onion, shredded carrots, and chopped celery; cook until softened, 5 minutes.
  • Add cubed potatoes, chicken broth, dried basil, and dried parsley. Simmer 10 minutes until potatoes are tender.
  • In a small bowl, whisk remaining butter into all-purpose flour. Gradually add 1 1/2 cups milk, blending into a smooth slurry.
  • Pour the milk mixture into the pot and simmer until slightly thickened, 5 minutes.
  • Stir in melted cheddar cheese until fully incorporated and soup reaches desired consistency.
  • Garnish with green onions and additional cheese if desired.

Notes

For leaner version, use turkey or 90/10 beef. Adjust salt in low-sodium broth. Stir in fresh basil at the end for brighter flavor. Store leftovers in an airtight container for up to 3 days.
