  • 2 cups carrots, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth Use low-sodium if preferred
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish Adds freshness and color

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add onion and garlic, sautéing until softened.
  • Stir in carrots and cumin, cooking for about 5 minutes.
  • Add lentils and vegetable broth, bringing to a boil.
  • Reduce heat and let simmer for 25-30 minutes, or until lentils and carrots are tender.
  • Season with salt and pepper to taste.
  • Serve warm, garnished with fresh parsley.

Notes

For a thicker soup, blend half of it and stir back in. You can add other vegetables like celery or potatoes for variation. Consider adding coconut milk for a creamy version.
