Ingredients
  

For the cake

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots Use fresh, finely grated carrots for the best flavor and texture.
  • 1 teaspoon vanilla extract

For the cream cheese layer

  • 8 oz cream cheese, softened Make sure the cream cheese is softened before mixing.
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract (for cream cheese layer)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking pan.
  • In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In another bowl, mix the granulated sugar, brown sugar, and vegetable oil. Add the eggs one at a time, beating well after each addition. Stir in the grated carrots and vanilla.
  • Gradually add the dry ingredients to the wet mixture until everything is combined well.
  • Pour half of the batter into the prepared pan.
  • In a separate bowl, beat the cream cheese, powdered sugar, and a teaspoon of vanilla until smooth. Spread this cream cheese mixture over the batter in the pan.
  • Pour the remaining batter over the cream cheese layer.

Baking

  • Bake in the oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let the bars cool before cutting them into squares.

Notes

These bars can be served warm or at room temperature. Top with extra cream cheese frosting or pair with vanilla ice cream for a delightful treat. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. They can be frozen for up to 3 months.
