Ingredients
  

Main Ingredients

  • 2 large large carrots, grated
  • 2 apples, cored and diced
  • 1/4 cup raisins (optional)
  • 1/4 cup walnuts or pecans, chopped (optional)

Dressing Ingredients

  • 1/4 cup mayonnaise or yogurt
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large bowl, combine the grated carrots and diced apples.
  • If using, add the raisins and chopped nuts.
  • In a small bowl, whisk together the mayonnaise (or yogurt), honey (or maple syrup), lemon juice, and a pinch of salt and pepper to create the dressing.
  • Pour the dressing over the carrot-apple mixture and toss until everything is well coated.
  • Serve immediately or refrigerate for an hour to let the flavors meld.

Notes

Carrot Apple Salad is best served cold and can be enjoyed on its own or as a side dish with grilled meats or sandwiches. Store in an airtight container for up to 2-3 days.
