  • 1 medium Bell Pepper (Sautéed)
  • 1 cup Mushrooms (Sautéed)
  • 1 tablespoon Maple Syrup (Drizzle for sweetness)
  • 1 cup Vegan Cheese (Stirred in for richness)

Preparation

  • Start by peeling and grating the sweet potatoes. Chop the tart apple and set it aside.
  • In a large skillet, heat the cooking oil over medium heat.

Cooking

  • Add the grated sweet potatoes to the skillet. Cook them for about 5-7 minutes, stirring occasionally, until they start to soften.
  • Stir in the chopped apple, sautéed bell pepper, and sautéed mushrooms. Cook for another 5 minutes until everything is tender.
  • Season the mixture with salt and pepper to taste.
  • Drizzle maple syrup over the hash brown mix for added sweetness and stir well.
  • Finally, add in the vegan cheese, stirring until it melts and combines well with the hash.
  • Once everything is cooked and well-mixed, remove from heat and serve immediately.

Notes

You can enjoy these hash browns alone or with your favorite sides. They are excellent with a dollop of avocado or a sprinkle of fresh herbs. Pair them with a cup of coffee or a smoothie for a balanced breakfast. For extra flavor, add some spices like cinnamon or nutmeg while cooking. Make sure to keep the heat at medium to avoid burning the sweet potatoes. If you like your hash browns crispy, let them cook a bit longer without stirring too much.
