For the Caramelized Onions

For the Cheese Filling

  • 8 ounces cream cheese (softened) Ensure it's at room temperature.
  • 4 ounces Gruyère cheese (grated) Alternatives include Swiss or cheddar.
  • 2 ounces Parmesan cheese (grated) Freshly grated gives best flavor.
  • 1 large egg Binds the cheese filling.
  • 1/4 cup heavy cream or crème fraîche Adds creaminess; crème fraîche brings tangy flavor.

For the Crust and Garnish

  • 1 box (14.1 ounces) refrigerated pie crusts Convenient, or use homemade or puff pastry.

Instructions
 

Preparation

  • Slice the yellow onions into thin strips.
  • Heat the olive oil and butter in a large skillet over medium heat until the butter melts.
  • Add the onions to the skillet and stir to coat them in the oil and butter.
  • Sprinkle in the sugar, balsamic vinegar, thyme, salt, and black pepper.
  • Cook the onions slowly, stirring occasionally, for about 25-30 minutes until they are deep golden brown and caramelized.
  • Once the onions are done, remove the skillet from heat and let them cool slightly.

Filling Preparation

  • In a mixing bowl, combine the softened cream cheese, grated Gruyère, grated Parmesan cheese, egg, heavy cream, and a pinch of nutmeg. Mix until smooth.
  • Add the caramelized onions to the cheese mixture and fold gently to combine.

Baking

  • Preheat the oven to 375°F (190°C).
  • Roll out the pie crust and fit it into tart pans or a baking dish.
  • Pour the onion and cheese mixture into the crust, spreading it evenly.
  • Bake in the preheated oven for about 30-35 minutes or until the edges are golden and the filling is set.
  • Let the tarts cool for a few minutes before serving.

Be patient while caramelizing the onions; it enhances their flavor. Use fresh ingredients for the best taste, especially cheese and herbs. Experiment with different cheeses based on your preference.
