Ingredients
  

Pasta and Vegetables

  • 8 oz Rotini pasta Any type of rotini or similar pasta works.
  • 2 cups Juicy tomatoes, diced Cherry or heirloom tomatoes are recommended.
  • 1 cup Sweet basil leaves, torn Use fresh basil for the best flavor.
  • 1 cup Mozzarella cheese, cubed You can substitute with feta or goat cheese.

Dressing and Seasoning

  • 1/3 cup Balsamic vinaigrette Adjust to taste.
  • 1 tsp Salt Or to taste.
  • 1/2 tsp Pepper Or to taste.

Instructions
 

Preparation

  • Cook the rotini pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the cooked pasta, diced tomatoes, torn basil leaves, and cubed mozzarella cheese.

Assembly

  • Drizzle balsamic vinaigrette over the salad and season with salt and pepper to taste.
  • Toss gently to combine and serve chilled or at room temperature.

Notes

Serve in a large bowl or individual servings. Garnish with extra basil leaves or sprinkle of parmesan cheese. Pairs well with grilled meats or can stand alone.
