  • 1/2 cup toasted walnuts or pecans, chopped Customize nuts based on preference.
  • 1/2 cup crumbled blue cheese or alternative Consider using feta for a different flavor.

Dressing

  • 1/4 cup orange juice
  • 2 tbsp lemon juice
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 cup olive oil

Preparation

  • Prepare the dressing by whisking together orange juice, lemon juice, apple cider vinegar, Dijon mustard, honey, salt, pepper, and olive oil until emulsified.
  • Toast the walnuts or pecans in a dry skillet over medium heat until fragrant. Chop into smaller pieces once cooled.
  • In a large mixing bowl, combine mixed greens, diced apple, dried cranberries, toasted nuts, and crumbled cheese.
  • Drizzle the dressing over the salad mixture and toss gently to combine. Serve immediately for best freshness.

Notes

If storing leftovers, keep salad and dressing separate to maintain freshness. The greens will stay fresh for a day or two. Whisk the dressing again before serving if it separates.
