Ingredients
  

  • Graham cracker crumbs* 1 1/2 cups (126 g)
  • Light brown sugar 1/4 cup (55 g), loosely packed
  • Ground cinnamon 1/2 teaspoon (optional)
  • Kosher salt 1/8 teaspoon
  • Unsalted butter, melted 1/2 cup (113.5 g)
  • Cream cheese, softened 24 ounces (680.39 g)
  • Granulated sugar 1 cup (200 g)
  • Cornstarch 3 tablespoons (44.36 g)
  • Eggs, large 4
  • Crushed candy bars (e.g., Hershey's Kisses, Milky Way) 1/2 cup (optional), for topping
  • Fresh strawberries, sliced (optional), for garnish

Instructions
 

  • Preheat oven to 275°F (135°C)
  • Line a 12-count muffin tin with paper liners
  • In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, salt, and melted butter. Press 2 tablespoons of mixture into each cup
  • In another bowl, beat cream cheese until smooth. Add granulated sugar and cornstarch, mixing until fully combined
  • Add eggs one at a time, blending thoroughly after each
  • Pour about 3 tablespoons of filling into each cup
  • Bake for 25-30 minutes until edges are firm but centers slightly wobble
  • Cool completely at room temperature, then refrigerate for 1 hour
  • Sprinkle crushed candy bars over the tops
  • Serve with fresh strawberry slices if desired

Notes

Use non-stick muffin cups for easy release
Let cheesecakes cool completely before chilling to avoid condensation
Substitute graham cracker crumbs with gluten-free or digestif biscuit crumbs as needed
Crush candy bars coarsely with a food processor or plastic bag + rolling pin
Store refrigerated for up to 2 days
