  • 2 large large cucumbers Use fresh cucumbers for the best crunch and flavor.
  • 1 cup imitation crab meat You can also use real crab meat if preferred.
  • 1 large avocado, diced For a fruit twist, you can use mango instead.
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce Use gluten-free soy sauce or tamari for a gluten-free version.
  • 1 tablespoon sesame oil
  • 2 stalks green onions, sliced
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste Adjust seasoning according to your taste.

Preparation

  • Slice the cucumbers into thin rounds and place them in a large bowl.
  • Add the imitation crab, diced avocado, sliced green onions, and sesame seeds to the bowl.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, salt, and pepper.
  • Pour the dressing over the salad ingredients and gently toss to combine.
  • Chill in the refrigerator for 30 minutes before serving.

Notes

Serve as a side dish or light meal. Pairs well with grilled chicken or fish. Store in an airtight container and consume within 24 hours for best freshness. Keep dressing separate if storing longer.
