Ingredients
  

For the filling

  • 1 cup brown sugar Packed brown sugar
  • 1/4 cup cornstarch Used for thickening
  • 1/4 teaspoon salt
  • 2 cups milk Whole milk recommended
  • 3 pieces egg yolks, beaten
  • 2 tablespoons butter Unsalted butter
  • 1 teaspoon vanilla extract

For the crust and topping

  • 1 prepared pie crust prepared pie crust Store-bought or homemade
  • to taste Whipped cream Optional topping

Instructions
 

Preparation

  • In a saucepan, whisk together the brown sugar, cornstarch, and salt.
  • Gradually stir in the milk and cook over medium heat while continuously stirring until it thickens.
  • In a small bowl, beat the egg yolks. Whisk in a little of the hot mixture to temper the eggs, then add this back to the saucepan.
  • Continue to cook for an additional 2 minutes, then remove from heat and stir in the butter and vanilla extract.
  • Pour the filling into the prepared pie crust.

Chilling

  • Refrigerate until set, about 4 hours.

Serving

  • Serve chilled, topped with whipped cream if desired.

Notes

For a twist, consider adding chopped pecans or walnuts into the pie filling or sprinkling them on top for added crunch. To store, cover tightly and keep in the refrigerator for up to 3 to 4 days.
