  • 1 cup shredded cooked chicken Use leftover or rotisserie chicken for convenience.
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese Feel free to experiment with different cheeses.
  • 1 cup coleslaw mix
  • 1 package egg roll wrappers
  • as needed for frying Oil Keep the oil hot for the crispiest result.

Preparation

  • In a bowl, mix together the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, and coleslaw mix until well combined.
  • Take an egg roll wrapper and place a small amount of the buffalo chicken mixture in the center.
  • Fold the bottom corner over the filling, then fold in the sides, and roll tightly.

Cooking

  • Heat oil in a deep pan to 375°F (190°C).
  • Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side.
  • Remove them and drain on paper towels.

Notes

Serve hot with extra buffalo sauce or ranch dressing. For a healthier option, consider baking the egg rolls instead of frying them.
