Main Ingredients

  • 1 head cauliflower, cut into florets Cut into even-sized florets for uniform cooking.
  • 1 cup Buffalo sauce Adjust to taste; use less for milder flavor.
  • 4 large tortillas Can use whole wheat or gluten-free variants.
  • 1 cup shredded lettuce For crunch.
  • 1/2 cup diced tomatoes
  • 1/4 cup ranch or blue cheese dressing Optional; use vegan version for a vegan dish.
  • to taste Olive oil
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss cauliflower florets in olive oil, salt, pepper, and half of the Buffalo sauce.
  • Spread the tossed florets on a baking sheet and roast for 20-25 minutes until crispy.
  • Warm the tortillas in a dry pan or microwave.
  • Layer the roasted cauliflower, shredded lettuce, and diced tomatoes on each tortilla.
  • Drizzle with the remaining Buffalo sauce and optional dressing.
  • Roll the tortilla to wrap the filling and serve immediately.

Notes

Serve warm. Enjoy with extra dipping sauce on the side or a fresh salad. Great for parties or casual get-togethers. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days, but best enjoyed fresh.
