Main Ingredients

  • 2 cups broccoli florets Fresh or frozen, no need to thaw frozen.
  • 1 can chickpeas, drained and rinsed
  • 1 cup cooked quinoa
  • 1 cup shredded cheese Use any cheese like mozzarella or cheddar.
  • 1/2 cup vegetable broth For vegan option, ensure broth is vegan.
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sauté the onions and garlic until they turn translucent.
  • Add the broccoli florets and cook for about 5 minutes until they soften a bit.
  • In a large bowl, combine the chickpeas, cooked quinoa, sautéed vegetables, vegetable broth, shredded cheese, salt, pepper, and paprika.
  • Transfer this mixture to a greased baking dish.

Baking

  • Bake for 25-30 minutes until the casserole is heated through and the cheese is melted.

Notes

Serve warm right out of the oven. Garnish with fresh herbs like parsley and pair with a salad or whole grain bread. For storage, let cool then refrigerate in an airtight container for 3-4 days, or freeze in a freezer-safe container for longer storage.
