For the Poutine

  • 1 bag Frozen Tater Tots
  • 1 bag Frozen French Fries
  • 4 Eggs Unsalted Butter for scrambling
  • 2 tbsp Unsalted Butter For the hollandaise sauce
  • 4 Egg Yolks
  • 1 tbsp Lemon Juice
  • 1 pinch Cayenne Pepper To taste
  • 1 cup Chicken Stock Optional
  • 1 to taste Salt
  • 1 to taste Pepper
  • 1 cup Crispy Bacon
  • 1 cup Breakfast Sausage
  • 1 cup Cheddar Cheese Curds
  • 1 bunch Green Onions Chopped

Instructions
 

Preparation

  • Preheat the oven to 425˚F (220˚C).
  • Bake tater tots and French fries on baking sheets for 25 to 30 minutes until golden and crispy.
  • In a bowl, whisk the egg yolks and lemon juice until light. Set over simmering water and gradually drizzle in melted butter while whisking until thick. Add cayenne, salt, and pepper.

Cooking

  • In a pan, melt butter and scramble the eggs slowly; season with salt and pepper.
  • Combine baked tater tots, French fries, scrambled eggs, bacon, sausage, and cheese curds in a large bowl. Spread this mixture onto a baking sheet.
  • Broil for about 1 minute until cheese melts.

Serving

  • Drizzle with hollandaise and sprinkle with green onions. Serve immediately.

Notes

For crispy tater tots and fries, avoid overcrowding them on the baking sheet. Whisk the hollandaise sauce continuously to prevent curdling. Customize with your favorite toppings such as avocado or different cheeses.
