Ingredients
  

Dry Ingredients

  • 1 cup flour All-purpose flour recommended
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt

Wet Ingredients

  • 3/4 cup milk
  • 1 egg Large size
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and grease a mini muffin pan.
  • In a bowl, mix together the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the milk, egg, melted butter, and vanilla extract.
  • Gently combine the wet and dry ingredients until just mixed.
  • Scoop the batter into the mini muffin pan, filling each cup about 2/3 full.
  • Bake in the oven for 10 to 12 minutes until golden brown.
  • Allow to cool slightly, then serve warm with syrup.

Notes

To store pancake poppers, let them cool completely after baking and place in an airtight container in the fridge for up to 3 days. They can also be frozen for up to a month and reheated as needed. You can customize the flavors by adding chocolate chips or spices like cinnamon.
