  • 3 slices whole grain bread
  • 2 large eggs
  • 4 slices smoked bacon Cooked until crispy
  • 2 slices cheddar cheese
  • 1 ripe tomato, thinly sliced
  • 1 medium avocado, mashed
  • 2 tablespoons mayonnaise For spreading
  • 1 tablespoon butter For cooking the eggs
  • to taste fresh lettuce leaves
  • to taste salt and pepper

Instructions
 

Preparation

  • Cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.
  • In the same skillet, melt the butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set but the yolks are still runny. Optionally, flip them to cook the other side.
  • Toast the bread slices until golden brown using a toaster or an oven set to broil.
  • Spread mayonnaise on one side of each bread slice.
  • On the first slice, layer the lettuce, tomato slices, and bacon.
  • Cover with a second slice of bread, mayonnaise side down. Spread mashed avocado on the top side.
  • Add the eggs and cheese on top of the avocado layer.
  • Place the final slice of bread on top, mayonnaise side down. Press gently to ensure everything stays in place.
  • Secure the sandwich with toothpicks and carefully cut it into halves or quarters for easy serving.

Notes

Use fresh ingredients for the best flavor. Adjust the toppings to your liking: add different cheeses or swap out the vegetables. For a spicy kick, add sliced jalapeños or a dash of hot sauce.
