Ingredients
  

For the Cookies

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened Make sure the butter is softened for easy mixing.
  • 1/2 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Whipped Filling

  • 1/2 cup heavy cream Make sure the heavy cream is cold.
  • 1/2 cup powdered sugar

For Assembly

  • 1 cup chocolate glaze (store-bought or homemade)

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • Gradually add the flour, mixing until just combined.

Baking

  • Scoop out tablespoon-sized balls of dough and place them on a baking sheet.
  • Bake for 10-12 minutes or until lightly golden. Let cool completely.

Whipped Filling

  • In another bowl, whip the heavy cream with powdered sugar until soft peaks form.

Assembly

  • Once the cookies are cool, spread a dollop of whipped cream on half of the cookies and top with another cookie to make sandwiches.
  • Drizzle chocolate glaze over the top of each cookie sandwich.
  • Serve and enjoy!

Notes
