  • 2 cups cooked rice Use day-old rice for best texture.
  • 4 slices bacon, chopped Can use other meats or tofu for variations.
  • 1 cup bok choy, chopped Fresh bok choy adds crunch.
  • 2 green onions, sliced Garnish with extra for serving.
  • 2 cloves garlic, minced For additional flavor.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon sesame oil Can substitute with vegetable oil.
  • Salt and pepper to taste For seasoning.
  • Optional: eggs for scrambling Add if desired for extra protein.

Cooking

  • In a large skillet, heat the sesame oil over medium heat.
  • Add the chopped bacon and cook until crispy.
  • Stir in the garlic and cook for an additional minute until fragrant.
  • Add the bok choy and green onions, cooking until the bok choy is tender.
  • Push the mixture to one side of the skillet and scramble eggs on the other side, if using.
  • Add the cooked rice to the skillet and mix everything together.
  • Pour the soy sauce over the rice and season with salt and pepper.
  • Cook for a few more minutes, stirring until everything is well combined and heated through.
  • Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a skillet or microwave. Adjust soy sauce to taste.
