Ingredients
  

Crepe Batter

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon sugar
  • 1/4 teaspoon salt

Filling

  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup blueberries
  • 1 teaspoon vanilla extract

For Cooking

Instructions
 

Preparation

  • In a mixing bowl, whisk together the flour, eggs, milk, melted butter, sugar, and salt until smooth.
  • Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.

Cooking Crepes

  • Pour about 1/4 cup of batter into the skillet and swirl to coat evenly.
  • Cook for about 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.

Preparing Filling

  • In another bowl, mix the cream cheese, powdered sugar, blueberries, and vanilla until well combined.

Serving

  • Fill each crepe with the cream cheese mixture, fold, and serve warm. Enjoy!

Notes

Serve the crepes warm, drizzled with maple syrup or a sprinkle of powdered sugar for an extra touch. Add fresh blueberries on top for color and flavor. If you have leftover crepes, store them in an airtight container in the refrigerator for up to 2 days.
