  • 1 cup cream cheese, softened Make sure to soften for easier mixing.
  • 1/2 cup unsalted butter, softened Ensure to soften for easier mixing.
  • 1 cup sugar
  • 2 large eggs Add one at a time.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh blueberries Fresh is best; frozen can be used if coated in flour.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, beat together the cream cheese, butter, and sugar until creamy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Best served warm or at room temperature. Pairs well with coffee or tea. Wrap tightly for storage; lasts 3 days at room temperature, 3 months in the freezer.
