  • 1 medium red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1 teaspoon cumin (optional) for additional flavor

Preparation

  • In a large bowl, combine black beans, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.
  • Pour lime juice over the top, and season with salt, pepper, and cumin (if using).
  • Stir until well combined.
  • Serve chilled or at room temperature.

Notes

For extra flavor, let the salsa sit for about 30 minutes before serving. For a spicier kick, add diced jalapeños or a splash of hot sauce. Adjust ingredients based on your preferences.
