Ingredients
  

  • Refried beans (pinto or black)
  • Plain nonfat Greek yogurt
  • Taco seasoning
  • Cooked shredded chicken
  • Mexican shredded cheese blend
  • Red enchilada sauce
  • 9-inch flour tortillas

Instructions
 

  • Preheat oven to 375°F (190°C)
  • In a large bowl, combine refried beans, Greek yogurt, taco seasoning, and shredded chicken
  • Fill each tortilla with chicken mixture and roll tightly
  • Layer rolled tortillas in a 9x13-inch baking dish
  • Spoon enchilada sauce evenly over all
  • Top with remaining sauce and shredded cheese
  • Bake 15-20 minutes until bubbly and golden

Notes

Substitute refried black beans for pinto beans
