  • 4 pieces chicken breasts Boneless, skinless
  • 1 cup blueberries Fresh preferred
  • 1 tablespoon fresh thyme Or 1 teaspoon dried thyme
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a medium saucepan, heat olive oil over medium heat. Add blueberries, thyme, honey, and chicken broth. Cook until the blueberries burst and the sauce thickens, about 5-7 minutes.
  • Season chicken breasts with salt and pepper. Place them in a baking dish and pour the blueberry sauce over the top.

Cooking

  • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.

Serving

  • Serve warm, drizzled with extra sauce and garnished with fresh thyme.

Notes

This dish pairs well with mashed potatoes or rice. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
