  • Chicken breasts, cut into bite-sized pieces – 1 pound
  • Oil – 1 tablespoon
  • Diced bell pepper – 1/2 cup
  • Diced onion – 1/2 cup
  • Diced jalapeño (seeded if desired) – 1 medium
  • Minced garlic – 2 cloves
  • Taco seasoning – 1 tablespoon
  • Shredded melting cheese – 2 cups
  • Medium flour tortillas – 4
  • Sour cream, salsa, or guacamole – to serve

Instructions
 

  • Heat oil in a large skillet over medium heat
  • Add chicken to the skillet and cook 5–7 minutes until browned
  • Incorporate bell pepper, onion, jalapeño, and garlic; sauté 3–4 minutes until vegetables soften
  • Sprinkle taco seasoning over the mixture and stir to coat
  • Divide chicken mixture into 4 portions on tortillas
  • Add cheese to each tortilla, folding halfway to melt
  • Fold tortillas fully and cook 2–3 minutes per side until golden-brown and crisp
  • Serve warm with toppings

Notes

Boneless thighs add richness if using
Use Greek yogurt instead of sour cream
Corn or whole wheat tortillas require lower heat for less browning
Store leftovers airtight up to 3 days
