  • 1 whole whole roasted beet Roast until tender
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2-3 tablespoons tahini Adjust to taste
  • 2-3 tablespoons olive oil Adjust for consistency
  • 2 tablespoons lemon juice Freshly squeezed is best
  • 1-2 cloves garlic, minced Adjust according to flavor preference
  • to taste Salt and pepper
  • as needed for consistency Water Add gradually

Preparation

  • In a food processor, combine the roasted beet, chickpeas, tahini, olive oil, lemon juice, and garlic.
  • Process until smooth, adding water a little at a time until you reach the desired consistency.
  • Season with salt and pepper to taste.

Serving

  • Serve beet hummus with pita chips, fresh veggies, or spread it on sandwiches and wraps.
  • Drizzle some olive oil on top and sprinkle with sesame seeds for a nice presentation.

Notes

Store any leftover beet hummus in an airtight container in the refrigerator. It will stay fresh for about 4 to 5 days. If it thickens in the fridge, just stir in a little water or olive oil to bring it back to your preferred consistency. Roasting the beet enhances its natural sweetness; adjust garlic amount based on taste preference. For a creamier texture, blend longer.
