  • 2 lbs beef chuck, cut into chunks Use well-marbled beef for tenderness.
  • 2 tablespoons vegetable oil
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 2 cups tomatoes, diced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 2 carrots sliced
  • 2 potatoes diced
  • 1 bell pepper chopped

Preparation

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the chopped onion and garlic, and sauté until softened.
  • Add the beef chunks and brown on all sides.

Cooking

  • Stir in the diced tomatoes, paprika, cumin, salt, and black pepper.
  • Pour in the beef broth and add the sliced carrots, diced potatoes, chopped bell pepper, and bay leaf.
  • Bring to a boil, then reduce the heat to low and cover.
  • Simmer for 1.5 to 2 hours, or until the beef is tender.
  • Adjust seasoning if needed and serve over rice or with bread.

Notes

Serve hot, topped with fresh parsley for added flavor and color. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
