  • 1 lb ground beef
  • 20 oz package cheese tortellini about 20 oz
  • 1 can enchilada sauce 10 oz
  • 1 can diced tomatoes 14 oz
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded Mexican cheese blend
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced green onions for garnish
  • 2 tbsp fresh cilantro, chopped for garnish

Preparation

  • Cook the tortellini according to the package instructions. Drain and set aside.
  • In a skillet, heat the olive oil. Sauté the chopped onion and minced garlic until they are soft.
  • Add the ground beef to the skillet and cook until it is browned. Season with salt and pepper to taste.
  • Stir in the enchilada sauce and diced tomatoes. Let this mixture simmer for about 5 minutes.
  • Add the cooked tortellini to the skillet and stir to coat it with the sauce.
  • Sprinkle the shredded cheese on top, cover the skillet, and cook until the cheese is melted.
  • Before serving, garnish with sliced green onions and chopped cilantro.

Notes

To save time, you can use pre-cooked beef or rotisserie chicken instead of cooking the ground beef. For extra flavor, consider adding spices like cumin or chili powder while cooking the beef. For spiciness, add jalapeños or cayenne pepper to the sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days.
